roasted brussel sprouts

Recipe

  1. In cold cast iron or enamel skillet, toss brussel sprouts in olive oil to coat.

  2. Roast sprouts at 425 F for 1 hour.

  3. Remove sprouts from oven, pour sriracha, fish sauce, and lemon juice on sprouts and stir to combine.

Ingredients

  • 1 lb brussel sprouts, trimmed

  • olive oil

  • 1 tsp siracha (red or yellow)

  • 1 tbsp fish sauce

  • juice of 1/2 lemon

How to trick people into liking brussel sprouts.

You could take the intellectual route and explain that modern brussel sprouts have been selectively bred to be more palatable. Or you can just try roasting them alongside familiar vegetables, like broccoli or cauliflower. Trader Joe’s baby cauliflower works perfect in this recipe, just add the cauliflower in with the sprouts before putting in the oven.

Can’t make your picky eater a brussel sprouts convert? That’s fine, more delicious roasted veggies for you.

How to cut brussel sprouts.

You can roast sprouts whole, halved, or quartered. Try different methods in the same roast to see what kind you like best.

If you roast brussel sprouts whole the centers will be soft and the outsides crispy. The more you cut, the more crunchy pieces you’ll get.
