clams and wine

Ingredients

  • 4 tbsp butter

  • 1 minced shallot

  • 4 garlic cloves (grated with microplane)

  • 1/2 cup white wine

  • 4 lb clams, cleaned

Garnish options:

  • parsley, chives, or basil


Recipe

  1. Melt butter. Saute shallot until soft. Add garlic, saute 30 seconds. Deglaze with wine and broth.

  2. Add clams. Cover and steam for 5-10 minutes.

  3. Discard any unopened mollusks. Plate with cooking liquid. Garnish if desired. Serve with bread.

How to clean clams.

Unless you like munching on sand, it’s a good idea to clean your clams. The fastest way to clean clams is to soak them for 20 minutes in fresh water. The clams will spit out sand inside their shells so you don’t have to. Pull the clams out of the water and scrub their shells under rubbing water. Discard any uncooked clams with cracked shells. Now your clams are ready to cook!
