clams and wine
Ingredients
4 tbsp butter
1 minced shallot
4 garlic cloves (grated with microplane)
1/2 cup white wine
4 lb clams, cleaned
Garnish options:
parsley, chives, or basil
Recipe
Melt butter. Saute shallot until soft. Add garlic, saute 30 seconds. Deglaze with wine and broth.
Add clams. Cover and steam for 5-10 minutes.
Discard any unopened mollusks. Plate with cooking liquid. Garnish if desired. Serve with bread.
